My Famous Bacon Mac & Cheese






Growing up if you asked me what I wanted to eat for dinner the answer was Mac & Cheese. My mom would make this delicious comfort food from scratch, I would impatiently wait for that cheesy goodness to get out of the oven. Still to this day I have to give in to the Mac & Cheese cravings.

If your looking for a great homemade Mac & Cheese recipe that will have you begging for more.... look no further. I serve this up at family get together's and no one can help but come back for seconds of this bad boy.  My secret you ask????.... BACON! If you have never tried Bacon Mac & Cheese, you are in for a treat. Just follow the recipe below and you will soon be in a cheesy, bacon heaven.



Bacon Mac & Cheese Recipe:

2 cups elbow macaroni (the bigger the noodle the better).

4 tablespoons butter

2 1/2 cups grated sharp cheddar cheese

3 eggs beaten

1/2 sour cream

1 can cheddar cheese soup

1 cup whole milk

1/2 teaspoon dry mustard

1 package of bacon


In a sauce pan add the butter with your 2 1/2 cups of grated sharp cheese. Stir until the cheese melts. In a slow cooker, combine cheese/butter mixture and add the eggs, sour cream, cheddar soup, milk, mustard. Stir well and let this sit on high for 2 hours (stirring occasionally). While waiting, boil macaroni until tender, drain and set a sided. Cook bacon and save bacon grease. About one hour to the two hour mark go ahead and add the macaroni, crumble bacon and add the bacon grease in as well. Stir well, salt and pepper to taste. Reduce the heat on the slow cooker to low. Stir occasionally until done.  (You may need to add just a little more grated cheddar cheese at this point). You may serve this up hot or  to get a crispy topping just  put it in a cooking pan add cheddar cheese on top and broil in oven (never use bread crumbs.. eww!!!).

Josh had been hinting about this cake for months leading up to his birthday, every time we went to Wal-mart he had to stop by the cake section just to take a look.

The Journey of Antelope Island



Oh all the sites we will see when we go hiking just you & me....






Josh and I decided to take a hiking trip to Antelope Island,  excited for all the beauty that lies ahead of us & unknowing of the lesson we were about to learn....

















We went to a part of the island called Buffalo Point, we jumped out of our car ready for a good day together. It was a warm sunny day & we had planned to hike Buffalo Point, then go back to our car to drive around the rest of the island before sunset.




















We made it to the top!!! Surprisingly no whining from me. Looking out onto the beach was an amazing view, so amazing we wanted to go play by the water. We weighed our options on going back to the car to drive down or we could hike down from this point (The beach looked closer than it appeared from up here). So, it was final we decided to go off the trail... thinking this would be an easy way down.

*Rule number one when hiking.....NEVER LEAVE THE TRAIL!















Making our way down we started to realize the beach was further away than we had first thought, it seemed like it was in reach but was taking forever to get there.

At this point I could not hold my whining in any longer. I thought to myself... maybe we should go back to the car. After talking it over with Josh we decided to keep going. We figured we were running low on water and climbing back up was farther than making it to the beach. The plan was to make it to the beach, follow the water around back to our vehicle on the other side. With Josh's words of wisdom I sucked it up and kept climbing down.






As we climbed closer and closer Josh whispered with excitement... look over there! I turned to see a beautiful buffalo grazing. It was a wonderful sight, I had been wanting to see a buffalo all day. A few snaps of my camera later Josh informed me that this beautiful animal might charge us... This was NOT the thing to say!!!! He came up with a plan just in case this magnificent creature decided he wanted to play a little game of kill the two idiot hikers. Our plan was to run for a huge rock near by were hopefully he could not get to us.

With my heart pounding in my chest we kept moving, keeping my eye on the buffalo we finally made it to our destination.











With water all around us and only drops to drink, we figured we better make our way back.
















Sand in our shoes and bugs attacking us we had walked a good two miles (just on the beach alone). Still no car insight... our throats dry from not bringing enough water I gazed over at the lake.  I could have jumped in and drank the whole thing dry.... if only it was not salt water!

*Rule number two while hiking..... BRING ENOUGH WATER!!















We made our way around to the other side to find no trail leading us back to our vehicle, tired and on the verge of dehydration our only option was to climb a huge hill that would bring us home. My body was weak, my legs felt as if they were over cooked noodles, my toes covered with blisters and my throat feeling like I had ate the piles of the sand beneath our feet (not to mention my bright red face from the pounding sun). Looking at the giant hill I wanted to start making an S.O.S sign in the sand or lay down and let the buffalo eat me.

As I was about to go feed myself to the buffalo, my survivor man (Josh) lifted our spirits and in no time I was climbing the giant hill that I was dreading.  We eventually made it back to our car safe and sound, with plans to challenge Antelope Island again.
