Healthier Cake Recipe

Say hello to Diet Soda Cake

*check out full recipes here:

This is amazing and super fast to whip up!  Here is all you need:

*If you are not using a can, it is 12 ounces of diet soda that you would want to use. ( I use diet root beer/diet cream soda).

You may also use a can of pumpkin with the cake mix instead of a can of soda. I recommend using the pumpkin with spice cake or carrot cake.

Noah is Three Months Old!

Noah is now three months old!... as of October 22nd that is. We are looking forward to his first Halloween and posting his cute costume photo's on here soon.

But, back to him being a big three month old!...

Three months have flown by and with every month it has been so exciting to see Noah learn new  things. We are proud parents for the little things he has learned these last couple of months. Lets take a look at some of the things Noah is doing:

* He is still eating all the time and he weighed in at a whopping 14.4 lbs the other day... (I knew that car seat was getting heavy).

* He loves to sit up or stand (with assistance) and look around the room very curiously. A look that shows he is eager to explore.

* We have started playing peak a boo!... I kept trying this early on... but it would only frighten him. Now he loves it and I can get a smile 99% of the time.

* Noah loves to kick his feet, we can barely keep a blanket on him without him kicking it off.

* Mommy helped him find his feet and now he is attempting every day to grab those suckers.

* He loves when you play bite his toes, he will giggle every time.

* Noah has found his voice... lets just say the kid has some pipes.

* He loves to copy Daddy! They will stick out their tongues at each other all day long if they could. (This was such a cool moment when Noah first did this. Josh stuck his tongue out at Noah and he did the same back. We did not think he meant to do this at first until Josh did it again and again... each time Noah would do it right back at him).

* We have started to try and teach Noah some sign language, stay posted to see if he will pick this up.

Our hearts keep growing bigger and bigger as does he. Our smiles keep getting brighter and more often, as does his. Our laughter is louder, as he giggles a long with us.

Pregnancy Pounds

So I have been obsessing over healthy meals and calorie counting in excitement of the thought of  fitting into my pre-pregnancy clothes. I am all for what are called "swaps", basically take something you like and find a way to "swap" the high calorie portions of a meal for something lower in calorie. Here are some of the great recipes I have tried and have loved. Try them yourself... you never know, you just may like them!

Zucchini Sticks

This is amazing!!!! This recipe is like the Blooming Onion you get at Outback Steak House ( due to the sauce).  However, unlike the Blooming Onion this has a lot less calories. It is oven baked and sooo yummy. Get the full recipe below:

 Buffalo Chicken Rolls

This is one of my favorite recipes, I love anything buffalo chicken style.

Wonton Taco's

You can do anything with a wonton/eggroll... and why wouldn't you with how low calorie they are when baked (not fried). Just bake the wonton/eggroll in the oven at about 400 degrees. Bake until crisp, fill with shredded chicken, cabbage and salsa for a low calorie dinner... soooo good!

Mozzarella Sticks

Mozzarella Sticks. (Egg Roll Wrappers + String Cheese...so easy) Bake instead of fry.  Also try them with turkey pepperoni inside (don't be scared turkey pepperoni taste like the real thing).

Breakfast Pita

Breakfast has never tasted so good and so healthy at the same time. Scramble some egg whites, throw some chives, bell pepper, onion, ham and add a very small amount of cheese in the mix. Stuff the egg mixture into a wheat pita that is topped off with some salsa and now we are ready to start our day.

Bear Hugs

We have had this cute little pajama number for a while now, they are not only just cute little pj's... they are cute little pj's that reminds us of Grandpa Weston. We were so excited when they finally fit, we decided to have a photo shoot and send the photo's to Grandpa. We ended up doing a collage with " To Grandpa Bear, Love Noah Bear"  printed on it. Hope it made you smile Grandpa, we love and miss you.
